Our Vision

Our nutrition program is an important component of our preschool. We believe that healthy, nourishing food is an equalizer for our students, which is why we serve all of our meals family style. Mealtimes are a shared learning experience where social skills are built and students gain a deeper understanding of what nutritious foods are and why they are important. Children are encouraged to try new foods and eat as much or as little as they want. We understand the importance of introducing healthy eating habits at an early age.

Here at EEL, children have the opportunity to assist with setting the table, serving themselves, and cleaning up. We meet or exceed federal food and nutrition requirements. We have chosen to partner with some of our favorite local chefs in order to deliver tasty and nutritious meals for our students and staff. We serve a well-balanced breakfast, lunch, and snack daily. Each meal is served with organic 1% milk and Blue Moon filtered water.

Our lunches are carefully prepared by the chefs of the Laughing Seed Cafe, a staple of downtown Asheville for over 20 years. Every meal is nut-free and contains fruits, vegetables, protein, and whole grains. We try to source local and organic ingredients whenever possible. We are happy to try make accommodations whenever possible, please speak with an administrator as soon as possible if your child has any dietary restrictions, allergies, or food sensitivities.

Growing Minds

Smokin' Onion

We have been fortunate enough to receive a grant from the Growing Minds Farm to Preschool program which we are using to break ground on our teaching garden. Children will be invited to see, touch, smell, and taste food that we will grow together right outside their classroom.

The Smokin’ Onion is a food truck and catering company on a mission to bring tasty veg’ food to the people. The Smokin’ Onion was started by chef/owner Parker Schultz (former executive chef of Laughing Seed Cafe) and his wife/partner Kiimia in Asheville, NC. Their menu is scratch-made and intentionally meat-free. You don’t need to follow a plant-based diet to love their crave-worthy cuisine. Open your mind & fill your belly!
